Ingredients

For The Garlic Confit:

50 cloves of peeled garlic

Olive Oil

Herbs (optional)

For The Chicken:

8 Chicken Drumsticks

Garlic Confit

2 tbs Paprika

2 tbs onion powder

1 tbs cayenne powder

Salt and pepper to taste

Frying Oil

1 cup of flour

1 cup of corn starch

Tools

Bowl for mixing

Oven safe pan or dish

Blender or Masher

Tin Foil

Pot for frying

Directions

Step 1

Peel 50 garlic cloves (or buy them peeled) and submerge them in Olive oil. Just enough to cover the tops of the garlic. Add in a sprig of rosemary or thyme if you'd like)

Oven safe pan or dish

Step 2

Cover your oven safe dish with tin foil and bake at 300°F for 2 hours. If you choose to smoke these, do it uncovered.

Strain out the olive oil and save for later. It's fantastic to cook with or drizzling over Pastas

Step 4

Mash or blend the garlic with paprika, onion powder, cayenne, salt, and pepper. (Use which ever seasonings you like)

Step 5

Add your garlic confit mash to your chicken and mix in 1 cup of flour and 1 cup of corn starch. Make sure your chicken is evenly coated.

Fry in oil at 350ºF until the chicken is at 165ºF. (Do not fry in olive oil. Use a high smoke point oil like Canola or peanut oil)
