These indulgent and savory bacon onion rings are a unique twist on the classic recipe. Thick onion slices are filled with a delicious mixture of breakfast sausage and cheddar cheese, then nested with a smaller onion slice to create a donut shape. The whole creation is wrapped in bacon and seasoned with a mouthwatering rub, giving it a bacon-donut appearance. Ingredients

2 large sweet onions

½ lb breakfast sausage

1 cup shredded cheddar cheese

Salt and pepper to taste

12 - 16 slices of bacon

Wooden toothpicks

4 eggs

For the seasoning rub:

2 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper (adjust to your spice preference)

Directions

Step 1

Preheat your grill or smoker to 275°F (135°C).

Step 2

Peel the onions and slice them into thick rings, about 1/2 inch (1.2 cm) in thickness. Separate the rings and set aside the smaller inner rings.

Step 3

In a mixing bowl, combine the breakfast sausage, shredded cheddar cheese, salt, and pepper. Mix well until everything is evenly combined.

Step 4

Take one of the larger onion rings and fill the center with the sausage and cheese mixture, pressing it down gently to ensure it's packed inside.

Step 5

Take one of the smaller onion rings and place it inside the larger onion ring, on top of the sausage and cheese mixture. This creates the donut shape.

Step 6

Wrap the stuffed onion rings with 2-3 slices of bacon, securing them in place with wooden toothpicks.

Step 7

In a small bowl, mix together the ingredients for the seasoning rub: paprika, garlic powder, onion powder, and cayenne pepper.

Step 8

Sprinkle the seasoning rub evenly over the bacon-wrapped onion rings.

Step 9

Place the stuffed and seasoned onion rings on the grill or smoker and cook at 275°F (135°C) for about 2 hours, or until the bacon is crispy and the onions are tender.

Step 10

Carefully remove the toothpicks before serving.

Step 11

While the onion rings are finished on the smoker put them onto a flat-top grill and prepare the eggs. Crack an egg into the center of each bacon-wrapped onion ring, being careful not to break the yolk.

Step 12

Continue cooking on the grill for an additional 5-7 minutes, or until the egg whites are fully set but the yolks are still slightly runny.

Step 13

Remove the onion ring "bacon donuts" with the cooked eggs from the grill and serve immediately.
