Ingredients

6 large eggs

1 tsp paprika

1 tsp black pepper

1 tsp salt

¼ cup mayonnaise

3 tbsp cooked breakfast sausage, finely crumbled

Crispy bacon (for topping)

Pancake syrup (for topping)

1 pancake, cooked and mashed into crumbles

Saucepan (for boiling eggs)

Skillet (for cooking sausage and pancake)

Directions

Step 1

In a skillet over medium heat, cook the breakfast sausage until it's browned and cooked through. Break it up into crumbles using a spatula while cooking. Once cooked, remove from the heat and set aside.

Step 2

Place the eggs in a single layer in a saucepan and cover them with water.

Step 3

Place the saucepan over high heat and bring the water to a boil.

Step 4

Once boiling, reduce the heat slightly to maintain a gentle boil, and cook the eggs for about 10-12 minutes.

Step 5

Remove the saucepan from the heat and transfer the eggs to a bowl of ice water to cool for a few minutes.

Step 6

Gently tap the cooled eggs on a hard surface to crack the shells, then peel them under running water.

Step 7

Slice each egg in half lengthwise. Carefully remove the yolks and place them in a separate bowl.

Step 8

Mash the egg yolks with a fork until they are smooth and crumbly.

Step 9

Add the paprika, black pepper, salt, mayonnaise, and crumbled breakfast sausage to the mashed yolks.

Step 10

Mix all the ingredients together until well combined and creamy. Adjust seasoning to taste.

Using a spoon or a piping bag, fill each egg white half with the deviled egg mixture. You can also use a plastic bag with a corner snipped off as a makeshift piping bag.

Prepare a pancake according to your favorite pancake recipe. As the pancake cooks mash it into crumbles using a spatula.

Sprinkle the crumbled pancake on top of each deviled egg.

Add a small slice of bacon.

Just before serving, drizzle a small amount of pancake syrup over the top of each deviled egg. The sweetness will complement the savory flavors.
