Ingredients

2 cups cooked and shredded chicken (rotisserie or boiled)

1 cup pancake mix

1 cup water

1 tablespoon vegetable oil

1 teaspoon baking powder

¼ teaspoon salt

¼ teaspoon garlic powder (optional)

¼ teaspoon onion powder (optional)

¼ teaspoon paprika (optional)

¼ cup maple syrup (for serving)

Step 1

Prepare the Chicken: Cook the chicken thoroughly and shred it into small pieces. You can use rotisserie chicken or boiled chicken breasts.

Step 2

Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions.

Step 3

Mix the Batter: In a mixing bowl, combine the store-bought pancake mix, water, vegetable oil, baking powder, salt, garlic powder, onion powder, and paprika. Stir until well combined, but avoid overmixing; some lumps are okay.

Step 4

Make Waffle Lollipops: Grease the preheated waffle iron with non-stick cooking spray. Place a small amount of the batter onto the center of the waffle iron. Add a spoonful of shredded chicken on top of the batter. Cover the chicken with a little more batter to encase it fully. Insert a wooden lollipop stick or skewer into the middle of the waffle, making sure it is securely held by the batter.

Step 5

Cook the Lollipops: Close the waffle iron and cook until the waffle is golden brown and cooked through. Cooking times may vary based on your waffle iron, but it usually takes 2-3 minutes. Carefully remove the waffle lollipops from the iron and place them on a wire rack to cool slightly. Repeat the process for the remaining batter and chicken.

Step 6

Serve: Once the waffle lollipops have cooled slightly, you can serve them with a small bowl of warm maple syrup for dipping.
