Ingredients

12 chicken drumsticks, with skin intact

Your favorite BBQ seasoning or dry rub

1 cup BBQ sauce of your choice

For the Candy Glaze:

1 cup granulated sugar

½ cup water

Ice water for cooling

Tools

Cutting Board and Knife

Smoker

Tin Foil Tray

Basting Brush

Candy Thermometer

Small Saucepan

Heat resistant Gloves or Tongs

Candy Making Supplies (Silicone Baking Mat or Parchment Paper)

Large Bowl with Ice Water

Directions

Step 1

For the Prepare the Chicken Lollipops:

Step 1

Carefully cut the skin around the bone of each drumstick using a sharp knife. Gently push and pack the chicken meat towards the thicker end of the bone, forming a lollipop shape. This will expose more of the bone, making them easier to hold and eat.

Step 2

Season the chicken drumsticks generously with your chosen BBQ seasoning or dry rub, ensuring even coverage.

Step 3

For the Smoking the Chicken:

Step 1

Preheat your smoker to 375°F (190°C).

Step 2

Hang the seasoned chicken drumsticks on the smoker rack, meat side down, ensuring they are well-spaced to allow even smoking.

Step 3

Place a tin foil tray underneath the drumsticks to catch any drippings and prevent flare-ups.

Step 4

Smoke the chicken until the internal temperature reaches 165°F (74°C), which typically takes around 1 to 1.5 hours, depending on your smoker and the size of the drumsticks.

For the Applying the BBQ Sauce:

Once the chicken has reached the desired internal temperature, carefully remove them from the smoker.

Using a basting brush, paint a generous layer of your favorite BBQ sauce onto each drumstick, coating them evenly.

For the Making the Candy Glaze:

In a small saucepan, combine the granulated sugar and water, stirring gently over medium heat until the sugar dissolves completely.

Increase the heat to medium-high and bring the mixture to a boil. Allow it to boil without stirring until the temperature reaches 300°F (150°C) on a candy thermometer. The sugar will caramelize and turn into a glossy candy glaze.

For the Coating the Chicken Lollipops:

Once the candy glaze reaches the desired temperature, quickly dip each BBQ-sauced chicken drumstick into the hot glaze, coating them entirely. Be careful as the glaze will be extremely hot.

To set the candy glaze quickly, immediately dip the coated drumsticks into a bowl of ice water. The glaze will harden into a sweet and crunchy shell.

Step 3
