Directions
Step 1
Begin by preparing the chicken feet. Rinse them thoroughly and snip the tips off using a sharp pair of kitchen shears. This step will help the feet absorb the flavors better.
Step 2
Bring a pot of water to a boil and add the cleaned chicken feet. Boil for 5 minutes to partially cook them. Drain the feet and pat them dry with a paper towel.
Step 3
Preheat your air fryer to 390°F (200°C).
Step 4
Toss the partially cooked chicken feet in cooking oil until they are well coated. Place them in the air fryer basket in a single layer and cook for 10 minutes until they turn crispy and golden brown. Shake the basket halfway through to ensure even cooking.
Step 5
Once done, transfer the air-fried chicken feet to an ice bath and place them in the refrigerator to chill.
Step 6
While the chicken feet are chilling, prepare the spicy glaze. In a pan over medium heat, add a tablespoon of cooking oil and sauté the minced garlic, ginger, and chopped chili peppers until aromatic and lightly browned.
Step 7
Add the chilled chicken feet to the pan, along with rice vinegar, oyster sauce, soy sauce, sugar, and water. Stir everything together to coat the chicken feet with the glaze.
Step 8
Bring the mixture to a boil and let it simmer covered for a few minutes until the sauce thickens and coats the chicken feet evenly.
Step 9
Once the spicy glaze has thickened and coated the chicken feet, remove them from the pan and place them on a serving platter.
Step 10
Drizzle the chicken feet with the kimchi mayo and garnish with chopped chives for a burst of freshness.
