Ingredients

1 pound chicken feet, cleaned and snipped at the tips

2 tablespoons cooking oil

3 garlic cloves, minced

1 inch piece of fresh ginger, minced

2 ½ red chili peppers, finely chopped (adjust to your spice preference)

2 tablespoons rice vinegar

2 tablespoons oyster sauce

1 tablespoon soy sauce

1 tablespoon sugar

¼ cup water

Fresh chives, chopped (for garnish)

Directions

Step 1

Begin by preparing the chicken feet. Rinse them thoroughly and snip the tips off using a sharp pair of kitchen shears. This step will help the feet absorb the flavors better.

Step 2

Bring a pot of water to a boil and add the cleaned chicken feet. Boil for 5 minutes to partially cook them. Drain the feet and pat them dry with a paper towel.

Preheat your air fryer to 390°F (200°C).

Toss the partially cooked chicken feet in cooking oil until they are well coated. Place them in the air fryer basket in a single layer and cook for 10 minutes until they turn crispy and golden brown. Shake the basket halfway through to ensure even cooking.

Once done, transfer the air-fried chicken feet to an ice bath and place them in the refrigerator to chill.
